Arancini risotto with cheese
Arancini (Italian arancini - “little oranges”) is a dish of Sicilian cuisine. It is fried or in some cases baked rice balls stuffed with mozzarella, tomato sauce and green peas and rolled in breadcrumbs.
The balls are crispy on the outside, hearty thanks to the risotto, inside and soft, stretchy cheese. Oh, this is bliss!
